I know this doesn't help your situation much but I have Windows 7 RC1 running at home with 8 gigs of ram ( 4x2gb sticks) and windows 7 does see all 8 gigs. Maybe what you installed is the 32 bit system and though it was the 64 bit? I don't know what the problem could be in your specific...
