During a Windows 7 Backup, I backed up a lot of unwanted folders and files. Can I remove these (manually) from the backup file or do I need to delete the backup and run it again without the unwanted folders included? (which I'd rather not do incase the backup fails for some reason)

HELP!!!! I noticed that there are several log files on my C:, I drag and dropped it on a notepad and it's all in Chinese characters. I'm not a Chinese, I don't run any Chinese program or software, I don't visit any Chinese websites.
