I have an HP desktop with an AMD Quad processor. The computer's operating system was Vista 32 bit. I purchased the 3 pack upgrade of Windows 7 as we also have two laptops. Now the stupid thing. I checked in device manager to see if the quad processor could run 64. It did not show the 64 capable line, so I assumed that it could only run 32. After doing the 32 upgrade, device manager showed that the processor is 64 bit capable. My question is, can I now do a clean install of 64 over the 32 upgrade using the valid 3 pack upgrade software?

Yes, you should be able to and the best route to take is the "clean" install as you mentioned.
