After I assemble an internal drive within the external enclosure with the cables are ready, do I create a simple volume, or just format or do both?
I am hoping to salvage my other relatively new HDD into a portable HDD to contain photos etc.
I would also like to image to this drive.

You can just format it that should automatically create a single partition on it.
