Unless you want to wipe your hard drive and start completely over, normally you would start Windows 7 and load the Install DVD. Do an upgrade install and it will redo your Windows 7 installation. You will probably have to re-activate it.
If you want to wipe the drive first, boot to the install DVD and do a custom install. Questions about upgrade version installs and if you need a prior install first will need to be answered by someone else since I do not know for sure.
