So I just went through all my MP3s with Mp3Tag to embed album art into them, but its still not displaying correctly. In Artist view some show album art and some don't, some show a stack of albums when there's only one album for that artist, some show the same album art more than once in a stack when there's only one album... So what do I need to do to get it to display ALL album art for ONLY the albums I have?

If you have, or have had iTunes, that is probably the problem. It takes over the album artwork. uninstalled iTunes and then ran ccleaner, ccleaner.com to remove iTunes registry connections to the artwork. As soon as you clean the registry the album covers should be fixed.
Also, Maybe there are saved folder.jpg files in the background that have hidden & system properties. Therefore try to uncheck "Hide protected operating system files" (in Folder Options) and see if there are. Delete them and refresh your albums.
