Windows 8.1 Witch Windows Version Should I Install??

*Also why my Grapchic Card says Undefined in the end?

I see your already running Windows 8.1 did you want to change?

Oh and the undefined in the graphics card may be pointing to the vendor. Usually Graphic cards manufactured by third party vendors like EVGA and it just might mean that the actual GPU manufacturer is undefined.
 
Why not stick with the OS you already have? If you don't like the Start screen and Metro apps, don't use them. If you absolutely can't get by without a Start Menu, install one of the many 3rd party programs that add it back in such as Classic Shell.
 
Go for windows 7 its simple yet advance, i feel very comfortable working on windows 7
