I like my type to be larger than what's offered with current settings - 1366x768. I scaled them up to 125% but that setting messes up some windows. I would like a setting of 110% but it's either or - 125 or 100%. Any way to get to 110%? Thanks.

There is an advanced scaling option, windows 7 style, where you can choose what scale you want.

This doesn't modify fonts used in apps for menus, menus items and others. Especially in old apps, not updated for win10, but still working. If you don't have such apps/programs, then "Make the size of fonts bigger" should be enough.
