I'd first point out that Server 2008 is EOL and 2008 R2 will be EOL next Janurary, so you may want to go with a newer version.
As far as installation goes you would install it as you would any other Microsoft Windows version. During the install it will have you pick a disk to install on at which point it will automatically partition as needed. If you want to have another data partition you can create that through disk management after Windows is installed.
