I just installed Windows 7 as a fresh install. I am coming from XP so I don't know anything about Vista or 7. When I was using XP, my documents (pictures, video, music) were private from other users on my computer. I can't figure out how to do this on Windows 7. All I want is when another user logs on to my computer that they can not access my documents.

It's like this by default. Unless they are administrators, users can only see their own path in the C:\Users directory. You can't change that administators can access practically all files on a computer - that's what they can by definition.
