Navigating Protected Folder Settings in Windows 10 Spring 1903 Update

Hello
I understood the way this was set up in the Fall creator update but am having trouble understanding what to do with the spring 1903 feature. I can leave it enabled and just allow those files I think are OK but I don't know what to do regarding settings. Do I keep them as low? I did not sync my PC with onedrive as I rely on macrium.
I wish I could remove those that were blocked because I am not sure of them there will ultimately be a long list after a while. What settings do you use?
