One Note, Windows 10, MS office home and student 2019, - OCR

I cannot seem to be able to use One Note to perform OCR . I tried OCR Free and it is OK but requires a lot of time to edit and format.
I watch YouTube videos but each is different and none work for me.
Could you please help me with this as I need to scan a document and use OCR with it. I read that Windows 10 does have OCR that works.
 
It seems to say it works with something that has been printed or with a picture. I guess this does not apply to a scanned document which I was looking for.
 
If it's scanned to a jpg file onenote ocr should be able to get the text from it.
 
I scan to desktop as JPG then open OneNote. Next I insert the document to OneNote but I never see the right click options on the videos.
I think once I get that step I can paste it to Word as I have the 2019 version.
Which right click option am I looking for and is there only one?
 
PC = Epson scan>all pages>edit. Word>file>open>browse=ocr

The above are basically the steps to get editable text with Epson all in one. Mine is WF 2760

If you need more specifics post back and I will do so. Hope this helps.
 
OCR the image, file, or screenshot you put in OneNote

OneNote
automatically did an OCR scan on anything you inserted into OneNote. You can check to make sure by right-clicking on any picture, screenshot, or file you inserted. Select “Make Text in Image Searchable” and then make sure the correct language is selected.
