desktop icon

When I right click a desk top icon, a menu pops up that is too big for my screen. Most of the options are of no interest to me. Can I edit this pop up?

A friend's computer appears to have Filemaker on it (much to our surprise) but it doesn't show in the list of programs in the start menu or in 'Uninstall programs. Why is this and how can I get it to do so? I have found the exe file and put an icon on the desktop.
