My max resolution for my monitor is 1920x1080. But when I go into the screen res option, it shows res's more than that. When I go over 1920x1080, my monitor says that it is not supported. That is beside the fact. The point is when I launch a game, it automatically sets the game to the max res my computer has, but not my monitor. Understand? If there was a way to set the max res my PC can handle would be good. THanks!

Solution
Is the monitor identified correctly in the Resolution panel? The system should not give you options that are not compatible with the monitor.

Is there a setting to show all modes and not just the compatible ones?

You should be able to set the game resolution to the correct number, if necessary.. The game should pick up the correct resolution you have set previously as 1920x1080.
