Windows 10 Local account, Microsoft app and disconnection from Microsoft account

Hello,
if I installed Windows 10 (and Windows 8.1 too, as dual boot), both with local account, no Microsoft account. I have only Microsoft account created on Microsoft site.
I would only install Microsoft application from Microsoft Store according to this description (with "Sign in to just this app instead" selection):

Could I then, because of privacy (and if I do not care about updates of this application), after app installation, somehow disconnect this connection with Microsoft account?
If it is possible, is there a chance that this application will work? This is for example the Microsoft Wireless Display Adapter app.

I don't use any of the apps from the store but I believe they will run even if you remove the store account; however, I don't think those apps will receive updates.
